Tough to say, but probably a well-run Tempest Spine. All that climbing, great immersion.
Gianthold Tor is always a blast, but I have a strange love for A study in sable. Either that or White Plume Mountain. Such a fun and unique design compared to many other quests, but like most people I love almost every aspect of the game anyway so it’s irrelevant I guess.
Framework
I really like ToD, but Xorian Cipher and White Plume Mountain are running a close second.

Spies in the House.
It is ironic, because I used to really hate the quest. Then somebody showed me where to stand to do the jump up to the grate in the first air-jet room, and more importantly showed me how to 100% reliably use the air-jet to get up to the electrified level after freeing the final prisoner.
Maybe some day I will figure out the Pit and have a change of heart about that one too.

Haberdasher. What's not to love about a 1-room slugfest?
Of course, there are other 1-room slugfests that are not so good because you need to protect someone/something (e.g. Cannith Crystal).
Favorite quest would probably be Spinner of Shadows...

Temple of the deathwyrm is definitely up there at the top for the coolness and ambience it sets up.
This is a harder question than usual. The first that came to mind is What Goes Up, mostly for the music and the feeling of grand scale when you get outside (the pretty icicle rain at the end doesn't hurt). I'll always have an appreciation for Spies in the House because of the fun I had figuring it out my first time in there, and Haunted Halls has a unique charm as well. Then there's Project Nemesis, where I get to manage a laser and have a blast timing Rudus jumps (and get blasted if I miss one). There are plenty more special ones, but I'll spare you the rambling :P
