Can you delete your last name and not have one? I have looked into this and can find no information. Anyone? Thanks.

Name Change Parchment (Surname)​

Allows you to permanently change your character's surname. Name can only be reverted or changed by using another Name Change Parchment.

Remove your last name I believe if you put a space it will then allow you to remove your characters last name.

If I recall, when you're changing your last name you can get rid of it by replacing it with one blank space in the dialog box.
