Does single weapon fighting feat work with two handed weapons like quarterstaff?

Negative. Here is the relevant text for it:

"Single Weapon Fighting: Requires fighting with a single one-handed weapon, and wielding only an orb, runearm, or nothing in your offhand. Does not function in animal forms."

Would bastard swords qualify? As in, have the 2handed animation, but SWF would work?

Bastard Swords and Dwarven Axes can get the benefits of SWF (as long as you are only wielding one weapon) and also get strikethrough, although the THF and SWF line of feats are mutually exclusive, but you can pick up THF Speciality feat at level 31 to gain +120% Strikethrough that will work with the speed boost from SWF.

As for the 2-handed animation, I doubt it since they aren't 2-handed weapons, but I've never checked it.

I swear I heard of a named quarterstaff that was considered bugged and in the game it was considered as both a two hander and single weapon? Crescent something?

Shining crescents are very weird, very rare, and ML10 so doesn't have really great stats.

But it's the only 2 handed weapon that a Shadar-Kai can swing on their chain.
