Impossible but...

Hi. Mostly a noob here.

I see in options there are 3 different ways, playing on my desktop, in how to display the games. Windowed, Fullscreen, and Fullscreen (windowed).

I'm wondering if the developers can open two windows for the game. one window for all my windows within the windows and one for gameplay. Thus if I want a fullscreen map to look at while I run around, I could do that. Or if I want my chatbox, equipment, and options or any other windows I want to pull up available, I've got that as well. I'm pretty sure this isn't worth doing to the developers, but it sure would make gameplay more pleasing to the eye. After all, you did a lot of work making these worlds and adventures. I'd rather see the graphics than the all the other stuff and focus on the gameplay.

The closest you could get to that right now would be if you ran an ultra-wide monitor. Then you could move all your clutter (chat, map, etc) to the far sides and keep the normal field of view free of things. You could also press ctrl-z to hide the ui so you just see the game world (but that also hides the hotbars, so probably not exactly what you'd want to do).

You can always have DDO Wiki open in another window. Its got high-res maps you can have available, at least.
I do do that, and have most bookmarked. It's just nice to have in real-time to see where I'm going on the map. And often there are nuances on the in-game map that I don't notice on the wiki. But on the flip side, I guess it would be good to get a full-res map and mark where I'm finding things in the game.

I have two monitors and I tried to stretch the window across both - this DOES work with most windows and browsers, but it didn't work with DDO unfortunately. Not sure why, but it is more related to the game and programming I suppose.

Gaming across multiple monitors can get weird depending on one's setup. There's ways to do it with DDO, but someone else would have to chime in on tech aspects of configuring/setting it up.
