Feel free to do the work and post the Sora Kell gear set. I'm positive you'll be giving up something fundamental like maximizing Assassinate DCs or Dread Stalker set bonuses.
This is a really nice gearset in the OP - it slots very nearly everything. Although, Sora Kell
can provide a pretty interesting tetris avenue that can lead to a few unique effects being slotted that could be worth looking at.
This idea fragments your item tetris into using the Windlasher's set and the craftable minor artifact goggles in order to shuffle Quality Wisdom +3 off of the trinket and Superior Reinforced Fists onto the belt slot, while retaining Insightful Seeker +6. Since Sora Kell gives +3 to all stats, you no longer need to slot Visions of the Beyond, and can instead slot the new Subtle Blade set - giving +3 Assassinate DCs and overall netting 2 after considering that Dustless Boots only gives +16 instead of Shadow Flight's +17. Furthermore, doing that allows you to benefit from Insightful Accuracy +10, Quality Accuracy +5, and Artifact Accuracy +3; this adds up to potentially overcoming an entire hit die of grazing hits, which is extremely annoying since it straight up causes QP to fail if you're unlucky.
Obviously, there are a few drawbacks to doing a gearset like this. Here's a quick napkin comparison of some of the important things:

This pro and con list doesn't cover everything, but it at least provides a strong outlook at determining which gearset that you might find to be more tailored towards the content that you're running. I'm personally a little more inclined to sacrifice quality doublestrike and cannith combat infusion since Aasimar gets its +5% doublestrike fallen purpose clickies and reaper mementos to also rotate around to keep it capped - and CCI has a pretty terrible proc rate, even on something as fast-hitting as a monk. In raids, you can just run the Doublestrike EPL instead of Ancient Tactics so neither option has an issue there.
The real drawback is the -30 MRR cap loss, but considering how you do get +36% Fire Absorption and still maintain 70 MRR if the rest of the build remains the same, it might be tolerable. Obviously, this is going to come down to what content you find yourself doing and either set is tailored for different things. But anyways, that's just my input on the Sora Kell route - great build!
